dine in | waffles and eggs

i have always been a diy person.  i think it's fun to see something that i like and try and make it myself.  i've made jewelry, learned hand lettering and often re-create meals that i've had at restaurants.  it's challenging and fun to deconstruct it and figure out what goes into it.

i thought it would be fun to share those recreated meals with you.  for the most part the recipes are simple. easy to make, good ingredients, and tasty meals.  that's what this is about.

for this dine in i wanted to recreate a waffle dish from the belgium waffle haus that recently opened in our neighborhood.


the morning liege | talk about simple. a waffle, an egg, and some veggies.  these waffles were really good.  slightly sweet, crispy on the outside and soft on the inside.  i loved the sweet and salty of this dish. but because there is not a lot going on, every ingredient had to be fresh and delicious.

my version | bobby made the waffles - he's good at that.  he used a mix but fluffs the egg whites and can make them crispy in the waffle iron.  i decided to make a fried egg because i LOVE a runny yoke.  i added the leafy greens, tomato slices, and avocado. then i topped it with salt and pepper, olive oil and balsamic vinegar. it looks like i missed the paprika.

the result |  waffles and eggs are the bomb.  hard boiled, fried or scrambled, it all works. i love the sweet and saltiness of this dish. it's my jam. crispy waffles are a must and just a small amount of balsamic to finish it off.  i used the aged one from trader joe's.  this was a win and something we will have again.
