2014 weekly menu | week 27

this morning's breakfast in our kauai home.
enjoying our last few hours in kauai before we fly home.  it's been an unbelievable stay - life changing in the most positive way.  lots of stories to be told, pictures to share, laughter to remember and good food to make.

i did not keep track of our meals here.  we rented a house and cooked at home but went out to dinner while we were exploring too.  so much good food that involved ahi tuna, pineapples, lychee, chocolate, burgers, kalua pork, more pineapple, malasadas, and maybe a cocktail or two.  i am bringing home some extra pounds as a souvenir of our trip.

i'm not sure what i'll be making this week for dinner, lots of salad and healthy food.  next week i'll try and make a few things we had here.

weekend eats
saturday: puka dogs as a late lunch/early dinner
sunday: bubba's burgers; hamburgers and fish 'n chips

making this week
monday: eating on the flight home
tuesday: chopped salad
wednesday: grilled salmon with salad
thursday: quinoa and edamame salad
friday: 4th of july

i am coming home with good energy.  we got a lot of rest here and enjoyed being just the 5 of us. i want to take home some of the aloha spirit and make it a part of our lives.  easy living, low stress, lots of laughter, beautiful flowers, enjoy the outdoor more and slow down our pace.  it can happen, right?  i'm gonna try.

mahalo!

2014 weekly menu | week 25

dessert options: banana cream pie, berry pie or tea cakes
this week is a bit crazy.  andrew is going to baseball camp on one side of the valley, jordan is going to water polo practice on the other side of the valley, and sofia and i are trying to entertain ourselves, run some errands and drive all over the valley.

so far we survived day 1.  we went shopping for summer clothes and sandals, grabbed a starbucks, and chatted in the car about movies and friends.

dinnertime will also be a challenge this week.  i'm going try to keep the menu flexible since i'm not quite sure how our evenings will work out.

weekend eats
saturday: bbq at my-in-laws - chicken, baked beans and pie
sunday: father's day bbq at my parents; carne asada, salad and berry crisp

making this week
monday: grilled salmon, couscous salad
tuesday: pizza - it's water polo night
wednesday: chicken fajitas, rice, homemade corn tortillas
thursday: breakfast burritos, fruit salad
friday: eat out

hope you're enjoying some time off this week.

around here | june

we are picking and eating yummy things from our garden.  zucchini, tomatoes and herbs.

we attended two retirement parties on the same weekend.

friday night we honored our head of school for the last five years as she retired from an educational career of over 40 years.  we dedicated the garden in her name, gave her a commendation from the city, and placed a statue by the garden to honor her dedication and care to our school.

she did a lot to move our school forward and especially over the last year when we fought to keep our beautiful campus - and won!  she was at the helm keeping all of us focused and staying positive.  she works so hard for our little school and we appreciate all that she has done.

our campus is the perfect place for a party, don't you think?

the second retirement party was on saturday for the notre dame band director of 46 years! talk about a legacy.

we were lucky to have been a part of the band for his last year as director.  the respect that the students, staff and parents have for him is impressive.  he started the band at notre dame and has maintained the highest standard throughout it's program; never missing a football game and competing in festivals, parades and showcases with quality and dedication. we are happy that the new director is coming from within and can carry on the program with the same integrity and class.

the tables were decorated with some of the trophies that the band has received over it's history.  there were plenty to go around.

we're eating pie.  yummy, sweet berry pies.  homemade and store bought.  it's all good.

we are loving watching our nephew grow.  he recognizes each of us and loves playing with the kids.  and we're hoping to meet our new cousin soon.  love seeing the pictures on facebook but i want to kiss and snuggle him.  we'll have to make some time to come visit.

we are done with baseball.  andrew's last game was on tuesday and it was a good game for him.  we will miss the playoffs but will be rooting the dodgers on.

and someone is happy that we will not be at the baseball field all of the time. although i know she will miss the snack bar.

enjoying this beautiful box of chocolates that were a gift from a fellow pto mom and made by one of the moms at our school.  the box doesn't look like this anymore.  we are being patient and enjoying each piece.  thank you for the thoughtful gift!

this was the graduating class of 2014. they call themselves the harmony of 9.  and it was appropriately summed up in the valedictorian's speech when she said something like this; we are a group made up of singers, artists, readers, athletes, and technology geeks, but together we make the perfect harmony. the ceremony was personal and touching.  each graduate was introduced by a teacher who described the student perfectly.  one teacher even wrote and sang a song.  yeah, we were all crying and laughing.

graduations at our school are something special.  a lot of the kids have been at cha since pre-school and this is their second home.  saying goodbye is tough. we are a big family and change is difficult.  but we are also so proud of the kids that graduate and we know they will do well in high school and in life.

it felt like just yesterday that we were celebrating jordan's graduation.  and in 2 short years it will be andrew's turn.

we've been to end of the year parties, jordan is doing water polo (6 days a week) and we are getting ready to go on vacation.  just the five of us.  cannot wait!!!

summer is here and we are going to enjoy every day.

2014 weekly menu | week 24

apple tart for a girls' brunch last weekend.
did this week really go by that fast?  did this year really go by this fast?  i was at the 6th grade end of the year party yesterday and we were all commenting on how it felt like we had just been there celebrating the end of 5th grade.  time is going way to fast, don't you think?

so it's no longer my plan for the week but a look at what we had for dinner this week.  kind of a fun change of pace.

weekend eats
saturday: notre dame retirement party for our band director
sunday: pork roast, potatoes and blueberry pie (thanks grandma sue)

made this week
monday: spaghetti and sauce with italian pork sausage. i had dinner at yard house and watched the hockey game with a friend.
tuesday: chicken caesar wraps, veggies and dip - after a baseball game defeat and water polo double header - we ate at 8:00 pm.
wednesday: last day of school parties - we ended up ordering a pizza for the 5 of us
thursday: grilled salmon salad  - if i can get myself to trader joe's in the next 10 minutes.
friday: dodger game - i'll bring hot dogs and drinks and we'll eat junk sensible snacks there.

first day of summer vacation today was thoroughly enjoyed but not productive - unless you count meeting friends at in-n-out and shopping on amazon productive.

2014 weekly menu | week 23

i made my favorite pasta salad for the swim banquet yesterday.  perfect for a potluck or bbq.  and very easy to make.

so is my menu for this week.

weekend eats
saturday: sushi (but we filled up on popcorn at the movies)
sunday: swim potluck

making this week
monday: sesame chicken salad
tuesday: bbq pork sandwiches, cole slaw
wednesday: chicken tortilla soup
thursday: salmon, hummus and goat cheese salad
friday: party at school

this is the last full week of school for the younger kids.  this morning the yoga teacher asked us to make intentions for what we want our week to look like.

what do i want from this week?
accomplishment.  get things done. be efficient, decisive and move to the next thing.  i can't put it off till next week.  and the list is incredibly long.

here's another fun blog i read often.

joy the baker
i can't say i've made many of her recipes but i love her photos and her wit.

i am planning to try this recipe this week. it looks delicious.

hope your intentions are fulfilled this week.
