weekly menu:: week 6

thought i would change it up this week and get my menu out early.


monday - santa fe chicken tortilla soup i make this a lot.  it is delicious despite her silly name for it.
tuesday - roasted salmon and spinach, thai noodle salad will share this recipe soon.
wednesday - turkey burgers, fries
thursday - pork chops, cornbread stuffing and green beans
friday - individual calzones and salad
saturday - leftovers
sunday - dinner out

we went to a superbowl party yesterday and we were in charge of bringing the dessert.  one of the ladies challenged bobby to make something.  i thought about brownies (from a mix, easy enough).  he took the challenge and ran with it.  look at what he created.
 not his first attempt at baking.  he made his own birthday cake one year.
his very own river rafting cake.  that's me in the front of the raft.  pretty cool, huh?

here's what i made for superbowl dessert.

i'm struggling a bit with my camera right now and don't have the patience to figure out what the problem is.  so i'm just dealing with it.  this dessert is very easy to make and oh so yummy.  ok, i only share the yummy ones, but that's besides the point.

cookie pizza
from the pampered chef
16.5 oz. refrigerated package of sugar cookie dough
8 oz. block of neufchatel cheese softened (low fat cream cheese)
1/3 cup sugar
sliced fruit

preheat oven to 350 degrees.  roll out cookie dough on a lightly floured surface to form a circle.  bake on a cookie sheet or stone for 18-20 minutes or until golden brown.  cool slightly loosening the cookie from the stone.  transfer carefully to the serving platter.

combine neufchatel cheese and sugar in a small bowl.  stir until well combined. spread mixture over the cooled cookie.  arrange fruit over the cheese and garnish with a sprig of mint. i forgot that this time.  slice like a pizza or cut into squares.

i also wanted to share a link to an appetizer recipe for pizza dip that i made for another party over the weekend.  this was so good.  wish i had taken a picture of it before it was all gone.
