2013 weekly menu: week 6

did you watch the game last night? wow, what a nail biter.  we were rooting for the 49ers but alas it was not our year.

it was fun hanging out with family and friends, eating and rooting for our team.

weekend eats:
saturday: leftovers
sunday: chicken andouille sausage, salad, chips and dip

making this week:
monday: turkey paninis, chips
tuesday: gnocchis with brown butter, salad
wednesday: chicken tortilla soup
thursday: mexican pulled pork tacos, cilantro lime rice
friday: pizza

for our super bowl get together i made a chicken chili dip. it came from our trader joe's store and was so easy to put together. i couldn't wait to make it.

chicken chili cheesy dip
2 cans of trader joes chicken chili
1 block of low fat cream cheese
1 cup of shredded cheese - i used 2% mixed mexican style cheese

empty both cans into a microwave safe dish with a lid.  microwave on high for 3 minutes. stir. add a block of cream cheese and microwave for 2 minutes.  stir until cheese is incorporated.  add shredded cheese and microwave for 2 more minutes.  stir together.  serve with large corn chips for dipping. enjoy!!
